Honey-Lime Grilled Chicken!

Yesterday was one of those days where I wanted to surprise Cornelius with a nice, home-cooked dinner.  It didn't really work the way I thought it would, though.  First, I decided I wanted to make this grilled chicken recipe that I found from allrecipes.com, but I didn't actually know how to use the grill.  So, I had to wait until he was home before I could actually learn how to use the thing, and actually cook the meal (he ended up doing all the grilling, so I still have no idea how to cook anything with the grill).  Then, I thought it might be nice to have some rice to go alongside the chicken.  Unfortunately, all we had was Mexican rice, and this chicken reminds me very much of an Asian meal.  It clashed.  A lot.  But, we both agreed that the chicken itself was really good, so I thought I'd share the recipe with you guys!

Ingredients

  • 1/2 cup honey
  • 1/3 cup soy sauce
  • 1/4 cup lime juice
  • 4 (4 ounce) chicken breasts
Directions
In a shallow container, combine the honey, soy sauce, and lime juice, and mix well.  Add the chicken, and coat it well in the sauce.  Cover and refrigerate for 30-45 minutes.  Drain and discard excess marinade.  Grill the chicken, uncovered, over medium heat for 6-7 minutes on each side, or until juices run clear.

  1. This sounds good! I've never tried soy sauce and honey. I've done honey and lime before and I like that combo. I bet soy would be good! We don't really grill much but I bet it would be good baked too...
