Hearty Italian Couscous Recipe!


I have been craving/loving Italian food lately!  So, the fact that I have another Italian dinner recipe for you guys probably comes as no surprise.  Although I'm sure my blog is making you think that Italian is all we eat, Cornelius and I have actually had a lot of grilled chicken and steak this summer.  While grilling is all well and good in these hot summer months, I think we were both ready for a little change, and this couscous/Italian sausage recipe fits the bill!  If you'd like to know how to make it yourself, read on!

Ingredients

  • 1 lb sweet Italian turkey sausage
  • 3 tbsp Olive oil
  • 1 medium onion, chopped
  • 1 red bell pepper, seeded and diced
  • 2 garlic cloves, minced
  • 1 cup plain couscous
  • Juice of 1/2 lemon
  • 1/4 cup fresh basil, sliced into thin ribbons
Directions
Preheat broiler to high.  Broil sausages until cooked, about 10 minutes, turning once.  Slice on diagonal, 1/2 inch thick.

Heat 1 tbsp olive oil in a saucepan over medium-high.  Add onion, pepper, and garlic; cook until soft, about 4 minutes.  Season with salt and pepper.  Add 1 1/4 cups water; bring to a simmer, then stir in couscous.  Cover, remove from heat, and let stand 7 minutes.

Fluff with a fork.  Transfer with sausage to a bowl; toss with 2 tbsp olive oil, lemon juice and basil.  Season with additional salt and pepper, if desired.
